Ingredients:
Organic Artisanal Penne Pasta
Spicy Cantabrian Anchovies
Pitted Olives in Extra Virgin Olive Oil
Natural Tomato Passata from Marmande, Sicily
Preparation of pasta with tomato, olives, and anchovies.
Sauté the anchovies in a drizzle of Secolo21 extra virgin olive oil – Nocellara/Moresca/Masseria selection – crushing them with the help of a wooden spoon. Then, add the pitted black olives and a clove of unpeeled garlic. Sauté everything for about 3-4 minutes.
After 4 minutes, add the Secolo21 Marmande tomato passata. Meanwhile, cook the pasta in a pot of boiling salted water.
One minute before the pasta is cooked, drain it and add it to the previous mixture. Toss the pasta for 2 minutes, adding half a ladle of cooking water if necessary. In the last few seconds, before turning off the heat, add black pepper and fresh mint.
Turn off the heat, stir for 10 seconds, and serve immediately.
